Thanksgiving Pumpkin Tea Loaf

What is Thanksgiving all about:

When the Pilgrims landed in what is now known as The United States of America they were unprepared for the weather conditions ahead and for the fact that the food was completely different than what they had left behind.  Following a harsh winter and many people not making it the remaining pilgrims met some native people who taught them about the local foods including pumpkins and squashes and how to store them.  They also introduced them to turkeys which were indiginous to the country.
Following a successful harvest the native people and the pilgrims had a harvest meal and many of the foods they ate then are still traditional Thanksgiving food.

When is Thanksgiving in the America:

Originally thanksgiving was held on a different day each year and often was a Thursday.  Because there were no weekends then it didn’t rally matter which day of the week it was held.
President Abraham Lincoln declared that the Thanksgiving holiday would be observed the fourth Thursday of November and it till is to this day.

Does Pumpkin Play a big part in Thanksgiving:

Pumpkin is a major ingredient in many Thanksgiving recipes.  My recipe here is for a delicious tea loaf perfect sliced, spread with butter and a cup of tea or coffee.

Thanksgiving Pumpkin Tea Loaf

A perfect recipe for thanksgiving or any time during the fall.

Ingredients
  • 2 cups Self Raising Flour
  • ½ tsp salt
  • ½ tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cloves
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 2 cups castor sugar
  • cup butter or 1 stick + 2 Tbsp
  • 2 large eggs
  • 1 can pumpkin puree
  • 1 cup raisins
  • ½ cup pumpkin seeds
Instructions
  1. Pre-heat oven to 180℃/350℉

    Prepare two 2lb loaf tins

  2. In a large bowl mix the flour, salt, baking powder, baking soda and ground spices. Set aside.

  3. In another bowl beat together the sugars and eggs.

  4. Add in the pumpkin puree.

  5. Mix in the dry ingredients.

  6. If using add the raisins.

  7. Pour into the prepared loaf tins.

  8. Sprinkle the tops with pumpkin seeds.

  9. Bake in a 180℃/350℉ preheated oven

  10. Bake for 65-75 minutes until a toothpick inserted in the middle comes out clean

  11. Cook on a wire rack for at least 5-10 minutes before removing from the tins.

  12. I like to slice and serve with butter and a cup of tea or coffee.

  13. Enjoy!

Pumpkin Tea Loaf (makes 2 x 2lb loaves)

 

Ingredients:

Mix together

2 cups SR Flour (levelled)

½ tsp salt

½ tsp baking powder

1 tsp baking soda

1 tsp ground cloves

1 tsp ground cinnamon

1 tsp ground nutmeg

Beat together

2 cups castor sugar

1 ½ sticks unsalted butter (150g)

2 large eggs

Add

1 can pumpkin puree or 15oz steamed pumpkin puree

Add

Dry flour & spices

Optional: some pre-soaked raisins and/or handful of
chopped nuts.

 

Bake in a preheated 180C oven for 65-75 minutes

Cool 5 mins in tins then remove to cool completely.
