
A perfect recipe for thanksgiving or any time during the fall.
Pre-heat oven to 180℃/350℉
Prepare two 2lb loaf tins
In a large bowl mix the flour, salt, baking powder, baking soda and ground spices. Set aside.
In another bowl beat together the sugars and eggs.
Add in the pumpkin puree.
Mix in the dry ingredients.
If using add the raisins.
Pour into the prepared loaf tins.
Sprinkle the tops with pumpkin seeds.
Bake in a 180℃/350℉ preheated oven
Bake for 65-75 minutes until a toothpick inserted in the middle comes out clean
Cook on a wire rack for at least 5-10 minutes before removing from the tins.
I like to slice and serve with butter and a cup of tea or coffee.
