Easy Cinnamon Crumb Cake
What is Crumb Cake:
Crumb cake is a simple sponge cake with some of the dry mixture kept aside and sprinkled on top of the finished batter before baking.
Is Crumb Cake the same as Coffee Cake:
In the United States where I grew up crumb cake is the same as coffee cake. Coffee cake does not contain any coffee but is the perfect cake to have with a cup of coffee just as the crumb. cake is. They are basically the same recipe.
When do you eat Crumb Cake:
The perfect time to eat crumb cake/coffee cake is mid morning with a cup of coffee or afternoon with your cup of tea. It is the perfect cake to have with the Swedish tradition of Fika (time to stop for a coffee and cake with friends in the afternoon).
Here is the recipe:

Crumb cake also known as coffee cake is perfect to have with a cup of coffee or tea.
- ¾ cup granulated sugar
- ¾ cup light brown sugar (packed in)
- 2 cups Plain flour
- 2 Tbsp baking powder
- 2 Tbsp ground cinnamon
- pinch sea salt
- ¾ cup room temperature unsalted butter
- 2 large eggs
- 1 tsp vanilla bean paste or vanilla extract
- ½-¾ cup milk you might need a bit more milk if the batter is too thick
- ½ cup sour cream
- Cinnamon layer
- ¼ cup castor sugar
- 1 Tbsp flour
- ½ tsp ground cinnamon

Pre-heat oven to 180℃/350℉

prepare a 9"x9" baking tin either by greasing and flouring or a layer of greaseproof paper

In a large bowl put the granulated sugar, light brown sugar, flour, baking powder, cinnamon and salt

Add the butter and using a fork mix into the dry ingredients until the mixture resembles breadcrumbs or sand

Reserve one up of this mixture to use later

Prepare the cinnamon layer and put aside

In a different bowl add the eggs, sour cream, milk and vanilla and mix well
-
Make a well in the dry ingredients and pour in the egg mixture and mix well
-
Put half of the mixture into the prepared tin and spread to the corners

Sprinkle the cinnamon layer evenly over this mixture

Carefully put the rest of the batter on top of the cinnamon layer
-
Sprinkle the reserved dry mixture over the top of the batter, this doesn't have to be level as it is nice when you bite into an odd bit of extra crumb!

Bake in the preheated oven for 45-55 minutes. The cake is done when a toothpick or cake tester inserted into the middle comes out clean.

Cool on a wire rack for 10 minutes in the baking tin

Cut into squares and leave to cool completely

Enjoy with a cup of coffee or tea!
