I have been craving peanut butter bakes lately.  This recipe for Peanut Butter blondies is one from a friend of mine Helen whose blog Fuss Free Flavours features this delicious recipe.

I remember when Brownies were in every cafe and coffee shop along with home made muffins.  The idea of a Brownie without cocoa powder wasn’t even a topic of conversation.  Of course there were other tray bakes similar to what we now refer to as a Blondie.

This recipe has peanut butter and chocolate chips however you could easily substitute white chocolate chips and macadamia nuts along with some melted white chocolate. I think this would take the Blondie to another level!

A delicious and easy recipe from Helen at Fuss Free Flavours

Servings: 16 pieces

Ingredients
  • 115 grams room temperature butter
  • 120 grams smooth peanut butter
  • 1 large egg
  • 1 tsp vanilla
  • 100 grams soft brown sugar
  • 100 grams golden caster sugar
  • 125 grams plain flour
  • 1 tsp baking powder
  • 50 grams chocolate chips/chunks
  • 1 pinch salt
Instructions
  1. Pre-heat oven to 180°C/160°C fan/350°F

  2. Grease and line a 8"/20 cm square baking tin

  3. In a small pan melt 50g of the peanut butter and the butter

  4. Cool slightly

  5. In a large mixing bowl add the melted peanut butter along with the sugars and mix well

  6. Add vanilla and the egg

  7. Add the flour, baking powder and chocolate chips

  8. Transfer to the prepared baking tin and smooth

  9. In a small saucepan melt the remaining 70g of peanut butter

  10. Pour this over the top of the batter and swirl into the mixture

  11. Bake 30-35 minutes or until a toothpick inserted into the middle comes out clean

  12. Cool for about 10-15 minutes

  13. When completely cook cut into 16 equal size squares (4x4)

  14. Enjoy!

  • Looks good but didn’t try. When I’m in a hurry I don’t want to have to convert from metric to standard measurement. I realize I ‘m in the minority but I just wanted to let you know the recipe caught my eye but I was in a hurry. I looked to see if there was a button I could click to convert the measurements but I didn’t find it. I think it is my loss. It photos looked really yummy.
