California Prune Banana Bread with Walnuts
My Banana Bread recipe is from my grandmother and has been made by my mother and myself for years. It is incredibly easy and only has four main ingredients. I have posted this recipe before however this time I am adding a specific dried fruit – California Prunes.
California Prunes add a lovely soft and sweet bite which along with the bananas and walnuts are really healthy. The prunes are full of fibre vitamin K and potassium, bananas are loaded with zinc and potassium and walnuts have loads of Omega3 so have that extra slice – it is really good for you.
You can make this recipe plain using only the four main ingredients; bananas, sugar, egg and flour, or you can add raisins or any dried fruit. Add some chopped nuts like walnuts or pecans and your have an added bonus in your banana bread. Of course you could omit the dried fruit and the nuts and add some dark chocolate chips!
It is a very American thing to spread the slices of banana bread with butter and that is of course a personal choice. However I recommend you try it! You might be surprised how good it tastes!
Historically, as this is an American recipe, the ingredients are measured in ‘cups’. I have tried weighing the contents of each cup of ingredients and the recipe was a bit hit and miss. However when I use my set of measurement cups it alway turns out perfectly!
Also the blacker the outside of the banana and the softer inside the better the finished result will be. You will never need to throw bananas away again with this recipe!
I was given a large quantity of black bananas so I happily got to making this recipe for friends and family! You only need 3 bananas for each banana bread. (if you have too many bananas you can always pop them in the freezer just like they are in the skins and defrost thoroughly when you are ready to bake).
Recipe for California Prune Banana Bread
A delicious and easy banana bread to enjoy with a cuppa tea or coffee or toasted for breakfast.
- 3 med-large very ripe bananas
- ⅔ cup castor sugar or golden castor sugar
- 1 egg
- 2 cups Self raising flour
- ½ cup chopped prunes
- ½ cup walnuts optional

Pre-heat your oven to 180℃/350℉

Line a 2lb loaf tin with grease proof paper or paper liner

In a large bowl mash the peeled bananas thoroughly with a fork

Add the egg and mix completely

Add your sugar and again mix well

Add the dried prunes and walnuts if using

Mix in the flour 1 cup at a time until thoroughly mixed and no traces of flour remain

Tip the mixture into your prepared tin

Bake in the centre of the oven for 55-60 minutes

Cool completely before slicing

Smooth butter on your slice and enjoy with a cup of tea or coffee

(if you have any left the following day you can alway toast slices. The sugars will caramelise and taste delicious!)
If after a couple of days you have any left you can toast the slices. They will go crispy and be totally delicious. Of course we rarely have any leftover to toast!
