What are fried green tomatoes:

When you have a glut of tomatoes at the end of the season you can either ripen them on a sunny windowsill, make green tomato chutney or dredge in flour and shallow fry in rapeseed or vegetable oil.  Serve with any summer meal especially bar-b-qued meats and salad.

Fried green tomatoes are a Southern delicacy that make for a delicious and crispy snack or side dish.

Steps to take:

Prepare the tomatoes

Set up the dredging station

Dredge the tomatoes

Heat the oil

Fry the tomatoes

Drain and Serve.

Fried Green Tomatoes

A delicious accompaniment to most summer foods

Ingredients
  • 4-5 medium unripe green tomatoes
  • 1 cup all purpose flour
  • 2 large eggs
  • ½ cup milk or buttermilk
  • 1 cup cornmeal
  • 1 tsp salt (adjust to taste)
  • ½ tsp freshly ground black pepper
  • ½ tsp chilli flakes
  • rapeseed oil or vegetable oil for frying
Instructions
  1. Remove the stem ends and slice each tomato into 2-3 slices.

  2. In two separate shallow dishes, set up a dredging station: Dish 1: All-purpose flour, cornmeal, salt, black pepper and chilli flakes. Dish 2: Whisked eggs mixed with milk or buttermilk.

  3. Dip the floured slice into the egg mixture, allowing any excess to drip off.

  4. Dip into the seasoned flour mixture, pressing gently to adhere.

  5. In a large skillet or frying pan, pour enough vegetable oil to reach a depth of about 1/2 inch. Heat the oil over medium-high heat until it reaches around 350°F (175°C). You can test the oil's readiness by dropping a small piece of bread into it; if it sizzles and browns quickly, it's ready.

  6. Carefully place the coated tomato slices into the hot oil, ensuring not to overcrowd the pan (you might need to fry in batches).

  7. Fry the tomatoes for about 2-3 minutes on each side or until they are golden brown and crispy.

  8. Adjust the heat if needed to prevent burning.

  9. Using a slotted spoon, transfer the fried green tomatoes to a plate lined with paper towels to drain excess oil.

  10. Serve whilst still hot with a dipping sauce or garlic aioli.

  11. Enjoy!

  • 4-5 medium green tomatoes
  • 1 cup all-purpose flour

  • 1/2 cup milk or buttermilk
  • 1 cup cornmeal
  • 1 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika or chilli flakes
  • Vegetable oil, for frying

How to enjoy:

Serve the fried green tomatoes while they’re still warm. They can be enjoyed on their own or with a dipping sauce like ranch dressing, remoulade, sweet chilli or a spicy aioli.

Fried green tomatoes are best enjoyed immediately after frying when they are crispy and piping hot. The tartness of the green tomatoes combined with the crispy coating creates a delightful contrast in flavours and textures.
