Easiest Flapjacks Ever!

Mr R loves flapjacks and I think this recipe is the best I have ever made!

The recipe is quick and easy to make and provided you have a few ingredients in your cupboard you can whip them up when someone says they are coming for a coffee or tea at the last minute!

You can add you own choice of flavourings but to keep them on the healthy side I can recommend some of my favourites like sultanas, dried cherries, dried cranberries, walnuts or pecan nuts in the combination of your choice.

For an extra health hit add some chia seeds and ground flax seeds to the oats.

Before baking sprinkle some roasted pumpkin seeds on top for extra crunch and health hit,

Bake 15-20 minutes, cool in the pan on a cooling rack for an hour. Cut into squares and enjoy!

Easy and Quick Flapjacks

A quick and easy recipe with only 4 main ingredients for a delicious snack with a cuppa.

Servings: 16 pieces

Ingredients
  • 200 grams unsalted butter
  • 200 grams light brown sugar
  • 140 grams golden syrup
  • 350 grams rolled oats
  • 125 grams sultanas
  • 50 grams chopped pecans, dried cranberries or dried cherries or a mix
  • 2 Tbsp whole chia seeds
  • 2 Tbsp ground flax seeds
  • 3 Tbsp roasted pumpkin seeds
Instructions
  1. Preheat your oven to 180°C/350°F

  2. Line a 8x8" square baking tin

  3. In a mixing bowl add the porridge oats, chia seeds, flax seeds and dried fruit and nuts

  4. In a sauce pan melt together the butter, light brown sugar and golden syrup

  5. Mix the sugar mixture into the dry and mix thoroughly. Take care to make sure all of the dry ingredients are covered

  6. Put the mixture into the prepared tin,

  7. Smooth down with a wooden spoon and press down evenly.

  8. Bake in the centre of the oven for 15-20 minutes

  9. Remove from the oven and cool on a cooling rack for at last one hour.

  10. Take our of the baking pan and cut into 16 squares.
