The English Drinks Company’s new Lemon Grove Gin

Easter always means fresh flavours and vibrant colours with lemons being the perfect Easter treat and just in time for Easter The English Drinks Company have launched a new gin – Lemon Grove Gin! It is traditionally hand crafted, copper distilled and infused with luscious lemons with a zesty citrus notes and a really smooth finish.
I always like to try my gins neat and over ice the first time. This way you get to really taste the botanicals and flavours. Adding tonic or other mixers can often hide the nuances of the gin if they are highly flavoured.
All of The English Drinks Company’s gins are unique whether you drink them neat over ice, with a tonic (The English Drinks Company also produce their own tonic water) or in a cocktail.

Gins are even being used as an ingredient in jams, chocolates, fudge and even traditional trifles! I made a Gin & Tonic Trifle so absolutely perfect if you are entertaining over Easter.
Here is my recipe for a Lemon Grove Gin & Tonic Trifle.

You can make one large trifle or you can, as I have done here, make 4 individual servings in the newly popular balloon size gin glasses.

- 1 ready made trifle sponge
- 100 ml English Drinks Company Lemon Grove Gin
- 1 packet lemon flavoured jelly
- 1 bottle English Drinks Company Tonic Water
- 1 jar lemon curd
- 300 ml ready made custard
- 300 ml double cream
- 1 lemon
- 12-16 mini Easter eggs

Using a cookie cutter cut a round of the trifle sponge to fit into your balloon glass.

Place the trifle sponge into the chosen balloon glass.

Over the sponge pour 25ml of Lemon Grove Gin and allow to soak in.

Spread the trifle sponge with 1-2 tablespoons of the lemon curd.

Make the packet of jelly according to instructions but use the tonic water for some of the cold water.

Carefully pour the slightly cooled jelly over the trifle up to about 1/3 of the glass.

Put into the fridge for 2-3 hours until the jelly sets.

Top with a layer of custard (the thickness of the layer depends on personal preference!

Whip the double cream until thick peaks.

Divide the whipped cream evenly over the four trifles.

Top each trifle with little Easter eggs or slices of Easter eggs.
