Years ago I used to have a cafe on the weekends at a local environmental centre. I would make all of my cakes, jams, chutneys and more during the week. One winner was my Honey Cake.
i hadn’t made this cake for quite a few years now however I had loads of honey in the cupboard and needed something special. I thought to serve it with a light sauce of cream cheese, icing sugar and honey whipped together. Perfect for any afternoon tea platter. Divine with a cup of tea.
I was going to interview The a High Commissioner for Barbados in the UK and wanted to take him a cake. Since this recipe called for Caribbean spices I decided it was perfect!

Simple and delicious Honey Cake
- 200 ml Clear honey
- 25 gm Butter
- 175 gm Wholemeal flour
- pinch Salt
- 1/2 tsp Mixed spice or ground ginger
- 1/4 tsp Ground cinnamon
- 1/4 tsp Ground nutmeg
- 1 Egg
- 3/4 tsp Baking soda
- 3 Tbsp Milk
- 3 Tbsp Flaked almonds

In a saucepan heat the butter and honey until the butter melts.

Take the pan off the heat.

Beat in the flour, salt, spices and egg.

Mix well.

Blend in the milk and baking soda mix.

Pour into a prepared 23 cm cake tin.

Sprinkle the flaked almonds on the top of the mixture.

Bake in a 180C oven for 25-30 minutes until firm to the touch,

Cool slightly.

Turn out onto a wire cooling rack until completely cool.

The spices are from Grenada ?? so really good quality and fresh.

Love love lpve honey cake! I am a honey fiend – we hsve a cupboard with about 10 different varieties! Will be hard choosing which one gets to go in this delicious cake!
