Recipe: Autumn Spiced Apple Cake

I have a recipe for an Autumn Spiced Apple Cake for you.

As the leaves start to turn those beautiful autumnal golds, yellows and reds and the weather starts to get ready for winter bakers all over turn to apples to satisfy their winter cravings.

There is nothing much better than the smell of baking apples whether in cakes, pies or applesauce making your whole house smell delicious.

This cake is perfect to have with a cup of coffee or tea sitting in the garden on a warm Autumn day full of those dark yellow and orange lights of the sun.  I liked to put a thin layer of thinly sliced apples in the middle of the cake – it looks lovely in the slice on a pretty piece of china plate!

The cake should look pretty with the apples arranged in a nice circle on the top and then into the oven.

A great cake to use up autumn cooking apples

Course: Dessert

Ingredients
  • 200 grams Plain flour
  • 1 tsp Baking powder
  • ½ tsp Ground cinnamon an extra ½ tsp of cinnamon can be added it you like
  • 100 grams Unsalted butter
  • 100 grams Castor sugar
  • 1 large Cooking apple, peeled, cored and diced
  • 1 large Cooking apple, peeled, cored and thinly sliced A mandolin is useful to get thin slices
  • 2 large Eggs
  • 60 ml Milk
  • 2-3 Tbsp Demerara sugar
Instructions
  1. Preheat oven to 180°C/350°F

  2. Grease and line a 20 cm cake pan

  3. In a large bowl mix the Plain Flour, baking powder and cinnamon

  4. Add the diced butter and rub in

  5. Add in the diced apples and castor sugar

  6. Beat the eggs and add the milk

  7. Add to the main mixture

  8. Pour half of the mixture into the prepared tin. and smooth out

  9. Arrange a layer of the thinly sliced apples

  10. Pour the rest of the mixture and smooth the top

  11. Arrange the rest of the thinly sliced apples over the top

  12. Sprinkle the top of the cake with the demerara sugar

  13. Bake in the middle of the oven for 45-50 minutes until the top is brown and a knife or cake tester stuck in the middle comes out clean

  14. Cool for about 10 minutes then remove from cake tin and cool completely

  15. Enjoy!
