How To Store Parsley

I asked my husband to get me some parsley recently expecting the usual small packet that you get from the supermarket. I was speechless when he came home with a bunch of parsley the size of a bouquet of flowers from the greengrocers! The most surprising thing was that this ‘bouquet’ only cost £1.99!

So of course now I had the problem of what to do with all of this fresh parsley after I had used the amount I needed for my recipe.

A small amount of parsley is easy to store and there are several ways to do this:-

  1. Stand in an appropriate sized glass half filled with fresh water and place on the windowsill in the kitchen,
  2. Dampen some kitchen towel and place the parsley (this also works for other fresh herbs) on the towel. Wrap the towel around the parsley and place in a zip-lock plastic bag and store in the veg drawer of the fridge.
  3. Finely chop your parsley and place in a zip-lock bag or small plastic container and freeze until needed.  You can just take a small amount out as you need it.

Waste Not Want Not

In order not to waste the large ‘bouquet’ of parsley I decided to prepare it for freezing.  I cut the greenest leaves along with some of the thinner stems and finely chopped them and after placing the pieces into a small zip-lock bag I put them in the freezer.  I will be able to take just what I want to use as and when I want to add a splash of colour to a pasta sauce or garnish an omelette.

Because the stalks were so long and thick they would hold loads of flavour and vitamins as well however be a bit too woody to eat.  I also made up a bag for the freezer with these stalks roughly cut to use in stocks.  They will add flavour to chicken stock or vegetable stock and since the stock will be sieved it doesn’t matter that they are so thick.
