Fresh summery pasta sauce with gnocchi and cheese

At the end of the tomato season there are many ways to preserve that bit of sunshine, aroma and taste we associate with fresh tomatoes. You can ferment, bottle, chutney your tomatoes however one of my favourite ways to keep that sunshine for the middle of the cold dark winter is to make this sauce.

I cut the tomatoes in half around the middle then grate each half until only the thinest skin is left. I then use this tomato in place of tinned tomatoes to make the freshest sauce ever.

You can just put the gnocchi into the bowl and ladle the sauce over, top with grated parmesan cheese or what I did was put half of the gnocchi into the bowl, place a slice of soft cheese (I used the Nettlebed Creamery cheese I was sent) and cover with the sauce. The repeat with gnocchi, cheese and sauce.  Grate fresh parmesan over the top and a few basil leaves torn into small pieces and serve.  A glass of cold white wine and this is a delicious supper!!

Summery Fresh Tomato Pasta Sauce

Quick and easy sauce to keep the summer on you plate

Ingredients
  • 2 Tbsp olive oil
  • 6-8 large fresh tomatoes
  • 1 medium white onion
  • 2 stalks celery
  • 1 medium-hot red chilli This can be according to preferred heat level
  • 1 tsp sea salt
  • 1 tsp freshly ground black pepper
  • 2 tbsp freshly grated parmesan cheese per person
Instructions
  1. Cut the tomatoes in half and grate each half into a bowl until there is only a thin piece of skin left. (be careful not to grate your knuckles)

  2. In a pan add the oil and lightly fry the onions until they are transparent

  3. Add the chopped celery and cook for a further 3-5 minutes

  4. Add the salt, pepper and chilli flakes

  5. Add the freshly grated tomato pulp

  6. Simmer on medium to low heat until the excess water has evaporated and the sauce has thickened

  7. Mix the pasta and sauce together and serve and grate fresh parmesan cheese on top

  8. For an optional serve place half the gnocchi or pasta and sauce in your bowl. Add one or two slices of Nettlebed Creamery, organic white rind, soft cheese and top with the rest of the gnocchi or pasta and sauce

  9. Enjoy with a side salad and a glass of your favourite red wine.

This sauce is fresh and summery and goes well with your favourite pasta.  I have served it with La Famiglia Rana traditional potato gnocchi.

Freeze the sauce in small bags or containers so that you can add them to soups, stews and sauces throughout the long winter to give your food that summery taste!

I was sent some ingredients from deli supplier Harvey and Brockless and asked to create a recipe with some of the ingredients.  I used the Dell’Ami Arbequina Extra Virgin Olive Oil, La Familia Rana gnocchi and Nettlebed Creamery soft cheese.
