Summery Fresh Tomato Pasta Sauce

Quick and easy sauce to keep the summer on you plate

Ingredients
  • 2 Tbsp olive oil
  • 6-8 large fresh tomatoes
  • 1 medium white onion
  • 2 stalks celery
  • 1 medium-hot red chilli This can be according to preferred heat level
  • 1 tsp sea salt
  • 1 tsp freshly ground black pepper
  • 2 tbsp freshly grated parmesan cheese per person
Instructions
  1. Cut the tomatoes in half and grate each half into a bowl until there is only a thin piece of skin left. (be careful not to grate your knuckles)

  2. In a pan add the oil and lightly fry the onions until they are transparent

  3. Add the chopped celery and cook for a further 3-5 minutes

  4. Add the salt, pepper and chilli flakes

  5. Add the freshly grated tomato pulp

  6. Simmer on medium to low heat until the excess water has evaporated and the sauce has thickened

  7. Mix the pasta and sauce together and serve and grate fresh parmesan cheese on top

  8. For an optional serve place half the gnocchi or pasta and sauce in your bowl. Add one or two slices of Nettlebed Creamery, organic white rind, soft cheese and top with the rest of the gnocchi or pasta and sauce

  9. Enjoy with a side salad and a glass of your favourite red wine.
