Following on from my Flour Shortage Chocolate Brownie recipe I have another way for you to bake during the flour shortages we are currently experiencing during the Coronavirus pandemic.

Once again I have looked to Yorkshire pudding batter mix for the flour component. This time I am adding beer (lager) although any fizzy drink should work such as lemonade if you don’t want the alcohol.

Once you try the recipe and are happy with the basic version try adding some interesting and tasty extras. You could add 35 gm sharp cheddar cheese on its own or also add 1 Tbs onion relish with the cheese for a ploughman’s loaf, or how about chopping some sun-dried tomatoes with the cheese. Another possibility is 35 gm chocolate chips and 2 Tbsp cherry jam for a ‘Black Forest’ loaf.
Here’s the recipe – I hope you give it a try!

- 3 130 gm pkt Yorkshire Pudding Batter Mix
- 1½ tsp baking powder
- 2 tsp baking soda (bicarbonate of soda)
- 330 ml lager beer or other fizzy drink
- 1 tsp sugar

Preheat oven to 190°C/170°C Fan/375°F

In a large mixing bowl combine the flour, baking powder and baking soda and mix with a fork to make sure it is evenly mixed.

Put into a lined 2lb loaf tin

Bake in the pre-heated oven for 30 minutes

Remove from the oven and let cool for about 5 minutes before removing from the tin

Slice and spread with lashings of butter and jam. Enjoy!!

Why use Yorkshire pudding batter mix?
I was in the supermarket looking at empty shelves which had once held many different types of flour. The panic buying of the previous few weeks had stripped the shelves. There on the bottom row was the Yorkshire pudding mix. I checked the ingredients on the back to see exactly what was in the mix and was pleasantly surprised to find it only contained flour (I guessed it would be plain flour), salt and skimmed milk powder. I figured that if I added baking powder (and baking soda – where appropriate) it should work just as well as any flour. I had to give it a try so firstly I tried the Chocolate Brownie recipe (see link below) and then this Beer Bread recipe.
Most of the major supermarkets have their own brand of Yorkshire pudding batter mix. I used the one from Tesco because due to the Coronavirus Lockdown I could only get to my local shop which is a Tesco Express.
What is the best way to eat this bread?
This bread will make great sandwiches as well as go really well with a hot bowl of homemade soup. I also like to toast this and serve with lashings of unsalted butter and home made jam.

Wow, this is so innovative. So many times we buy stuff without reading what the contents are. Not any more this lockdown has brought forth so many ways to imitate my grandmother and mothers food. I like this bread will definitely try it,

The beer gives it a lovely flavour but you could use lemonade if you don’t want the beer!
