Recipe: The Easiest Summer Fruit Cobbler
Here is my recipe for the easiest summer fruit cobbler:

Blackberry, Blueberry, Peach or Plum the choice is yours but this easy bake fruit dessert is perfect for feeding the family after Sunday lunch, intimate dessert for two, serve to companyor just because you fancy making one! Everyone will love this and the best thing about it is how easy it is to put together and to bake.
During this summer I have made a cobbler many times each time varying the fruit depending on what was seasonal. I even took all the ingredients to my a friend’s house so I could bake it for her and we could eat it hot out of the oven! I have even taken the ingredients in kit form to a friend’s for lunch and made it there (I even took the baking dish and greaseproof paper to butter it!)
I am all about quick and easy recipes both savoury and sweet. Perfect recipes can be made with minimal ingredients with little or no preparation and that make everyone ask for another piece!

Plum Cobbler

Raspberry

Recipe:

- 1 cup Self Raising flour
- 1 cup caster sugar
- 1 cup milk
- 62 grams butter melted
- 50-100 grams Blackberries or Blueberries or Peach slices or Plum pieces
- sprinkle golden caster sugar
- 1 tsp ground cinnamon optional
- ½ tsp vanilla extract optional

Pre-heat the oven to 180°C/350°F

Butter your flan dish or quiche dish really well (get into any indents around the top where applicable)

In a large bowl add the sugar, flour, melted butter and milk (if using cinnamon and/or vanilla add now

Mix really well

Pour into the prepared baking dish

Sprinkle blackberries (or other berries) over the top of the batter

Sprinkle the top with caster sugar (golden or white)

Bake for 1 hour

Run a knife around the top of the baking dish to make sure it will not stick

Cool slightly before serving (cream or ice-cream go really well as does custard)

Enjoy
The Serve:
Of course you can just eat a slice of this delicious treat on it’s own but it is elevated to another place with a drizzle/glug of double cream or possibly a nice scoop of vanilla ice cream while it’s still warm from the oven.
