Flour Shortage Chocolate Brownies
Here is a recipe for Chocolate Brownies in a flour shortage:-

During the current Coronavirus we are experiencing loads of shortages in the supermarkets. One item which has not been on the shelves for a couple of weeks is flour.
I was looking through my baking cupboard and found a packet of Yorkshire pudding batter mix. Looking on the back of the packet the ingredients listed were: flour, salt and skimmed milk powder and nothing else. So naturally I wondered if this could be used for baking without making a difference to the outcome.
I used my simple recipe for chocolate brownies using the Yorkshire pudding batter mix instead of flour and assumed that it would be plain flour so I included baking powder in my recipe.

- 115 grams unsalted butter at room temperature
- 225 grams soft brown sugar
- 2 medium eggs
- 85 grams Yorkshire Pudding batter mix
- 45 grams cocoa powder
- 1 tsp baking powder

Pre-heat oven to 180°C

Grease and line a 9"x9" brownie pan

Cream the butter and sugar together until fluffy

Add the eggs one at a time and mix well after each one

In a seperate bowl sift together the Yorkshire Pudding batter mix, cocoa powder and baking powder

Gradually add the dry ingredients to the creamed meixture

Spread the batter into the prepared pan and level out
-
Bake at 180°C for 30 minutes

Check by inserting a knife into the middle to see if the middle is cooked. If so take out of the oven. If not leave in for a couple more minutes

Cut into squares whilst in the tin then leave until completely cool before sprinkling with icing sugar if desired.

I don’t have Yorkshire pudding mix but do have pancake mix….could try that?
Just check if the pancake mix doesn’t have too much sugar – look at the list of ingredients on the packet.

Yes, they are pretty much the same. Look on the ingredient list of popover mix it might work.
These definitely look different and yummy. Something to try especially at the moment if unable to get staple ingredients.
Yorkshire pudding batter mix is just flour, salt and skimmed milk powder – should work in loads of places you need flour.

The addition of skimmed milk powder didn’t hurt the taste at all and in fact enhanced it.
Oh yummy! I never would’ve thought to make brownies using Yorkshire Pudding batter mix but it’s a great idea. Maybe I’ll give it a go if I run out of flour.

Great recipe. We’ve been in quarantine in Greece a bit longer in Greece than the UK and baking is keeping me sane ! The recipe looks amazing and I want to make it! I don’t think we can get the Batter Mix in Greece. What can I substitute it with??
