Recipe: Easy Peanut Butter Brownies
Here is my recipe for Easy Peanut Butter Brownies, rich and chocolaty with the salty stripes of smooth peanut butter.

Recently it was national chocolate day as well as national peanut butter day so naturally I decided to combine the two and make Peanut Butter Brownies.
When I was growing up brownies were alway more cakey than gooey but the trend now is to have them really gooey. These are the perfect balance between cake and gooey! I hope you like them as much as I did and as much as the family did – they didn’t last long.

- 250 grams Unsalted butter
- 200 grams Dark chocolate broken up
- 3 Tbsp Golden Syrup
- 4 large eggs
- 300 grams Golden Castor Sugar
- 200 grams Self Raising Flour
- 2 Tbsp Cocoa Powder
- 4-6 whole Peanut Butter Cups cut into quarters
- 4-6 Tbsp Peanut Butter

Preheat oven to 160 degrees Fan

Butter and line a 10" x 10"/25cm x 25cm cake tin

In a saucepan melt the butter, chocolate pieces and golden syrup

Crack the eggs into a bowl and add the sugar

Whisk the eggs and sugar until light and fluffy. The longer you whisk the thicker and fluffier the mixture will become which is good

Add the melted chocolate and fold into the sugar and butter mixture

Sift into the bowl the flour and cocoa powder

Add a pinch of sea salt

Melt the peanut butter in the microwave until thin enough to drizzle

Pour half of the mixture into the prepared pan

Drizzle the peanut butter over the chocolate mixture

Top with the rest of the brownie mixture

Place pieces of the peanut butter cups randomly on top of the brownies

Bake in the pre-heated oven for 30-35 minutes

Cool completely in the tin then cut into squares
I think these were the best brownies I have had in a long time! Instead of peanut butter you could put chocolate chips in the middle layer and sprinkle some on top. Another idea would be to pop some Love Hearts on the top as soon as they come out of the oven and give to your special person!
