Greek courgette pie

At this time of year the courgettes/are in full flow at our allotment.  Each day we pop up to pick some we are blown away by the abundance of fresh, organic, courgettes that are ready for picking.  I try to use them in as many different recipes as possible and have made courgette cakes, courgette relish, fried courgettes, stewed courgettes and oh so many other recipes.

At a friend’s birthday party I met a lovely Greek lady called Theodora.  When I told her of the courgette abundance she said she would email me a recipe for a Greek Courgette Pie or Kolokuthopita. The recipe she gave me was somewhat vague without quantities.  I did my best to work it out and it came out really well and very delicious.

The courgettes will grate really easily with a large box grater.  I love to use both green and yellow courgettes from my allotment.

Ingredients
  • 3-4 medium Courgettes/Zucchini
  • 12 sheets Filo pastry
  • 4-5 Tbsp Extra Virgin Olive Oil
  • 1 large Onion - finely chopped
  • 1 bunch Fresh Dill
  • 1 bunch Fresh Parsley
  • 1 small bunch Fresh Mint Leaves
  • 5 large Eggs
  • 2 packs Feta Cheese
  • 1-2 tsp Sesame seeds
  • 1-2 tsp Poppy seeds
Instructions
  1. Pre-heat the oven to 180°C/350°F

  2. Shred the courgettes and let them sit in a collander for about an hour to release their excess water.

  3. Put the shredded courgette into a clean tea towel and squeeze until no more liquid comes out.

  4. In a large bowl put the eggs (slightly beaten) with the finely chopped onion, dill, parsley and mint.

  5. Add the shredded courgettes and mix well.

  6. Add the crumbled feta cheese.

  7. You will need 6 sheets of filo pastry for the bottom of the pie and 6 sheets for the top.

  8. Brush each sheet of filo pastry with the Extra Virgin Olive Oil and layer six sheet into your baking pan.

  9. Pour the courgette mixture into the prepared pan.

  10. Place the oiled remaining 6 sheets on top of the pie.

  11. Roll the edges of the pastry around the edges of the baking pan.

  12. Sprinkle with sesame seeds and poppy seeds and make a slit in the middle of the pie.

  13. Bake for approximately 40-45 minutes until the pie is delicately light brown and crispy.

  14. Allow to cool slightly to let the egg-courgette mixture to set.

  15. Cut and serve with a crisp salad with light vinnaigrette dressing.
