Pancake Day for Mr R!
For Pancake Day (also known as Shrove Tuesday – the day before Ash Wednesday and the start of Lent) this year I decided to give Mr R a pancake treat! He really loves Old El Paso Enchiladas and we have every couple of months which gave me the idea to feature them as our savoury pancakes for dinner.
Instead of rolling them up with the filling and baking in the oven I put the tortilla wraps in an ovenproof stoneware dish flat out like pancakes and layered them with the cooked filling. The final pancake layer was topped with the remaining sauce and grated cheese and baked for 20 minutes to heat through and melt the cheese.

And then for pudding!!
As I am American I like the familiar American pancakes and am pretty much traditional in the way I like them. Plain or with blueberries and only authentic maple syrup poured over.
Mr R is of course English so I also have to consider his pancake traditions and this year I decided to have both for our Pancake Day pudding. I had been sent some Abra-ca-Debora sweet dutch pancakes which are super easy to heat in the microwave in 30 seconds and I provided a selection of toppings for Mr R and FIL to top their own.

For myself I had plain American style pancakes,
Mr R and his dad topped theirs with chocolate spread and whipped cream (crowned with After 8 mints)
and lemon curd inside topped with whipped vanilla bean cream
For me, a slight break from tradition and a spoon of whipped vanilla bean cream with my maple syrup!
A great way to celebrate Pancake Day!
I received some dutch pancakes from Abra-ca-Debora and some chocolate sauce from Sweet Freedom but everything else was from my trip to the supermarket or my larder cupboard. I did not receive any payment to write this post and as always all opinions are my own.

O gosh! This is real pancakes feast! Lovely toppings Heidi 😉
Thanks Sylvia – I do like to go mad with a theme!
I loved the baked layered pancakes they look great.
It was just a variation on a theme but it did taste good.
What a delicious selection of pancakes, I especially like the your version of the baked enchiladas.
It made a change and I served it cut into wedges – very filling too.
Gosh that's a real feast of pancakes, how delicious.
I love pancakes – I was having fun this year!
I LOVE your enchilada pancake stack bake thingie Heidi, it's just fabulous and would go down a treat in my home!
We usually roll them but I really liked the variation of stacking them – went down well.
It never occured to me to buy pancakes but those ones from Abracadebora are very good. I have used them in baked pancake dishes.
It's the first time I have used Abra-ca-Debora, usually make my own but not a bad choice for a quick pudding.
I love pancakes and am happy to eat any style, although I think your American ones are probably the easiest to make.
I must admit I prefer the American ones – I always make too many and eat them cold at work the next day!!
I'm busy munching on those little dutch pancakes from abra ca debora at the moment. while in principle I make my own, in reality I quite like a few cheats from time to time!
There is nothing wrong with cheating from time to time! Sometimes it is the most appropriate course of action.
what a fabulous feat Heidi , am hungry all over again !! Manjiri – http://sliceoffme.wordpress.com/
I feel the need to make the american ones again soon!!
Oh the curd one for me please! Love curd.
They were tasty but my favourite is the maple syrup!
That's one tasty pancake day celebration, loving the pancake double whammy!
Well if it's pancake day you have to have pancakes!!
A serious homage to the humble pancake 🙂

The pancakes with the maple syrup were home made! They are my Sunday morning guilty pleasure!
