Recipe: Courgette Relish

At the time of the year when one might find ones self with a glut of courgettes and our allotment is no different we turn the glut into courgette relish..  I have been using courgettes in loads of different ways  but when you get too many to cope with this recipe is perfect.

Courgette Relish

I usually make two batches (each batch yielding 16 jars).  It takes a bit of time to prep everything but the actual making is fast and simple.

Ingredients
  • 10 cups coarsley chopped courgettes
  • 3 green peppers
  • 2 red peppers
  • 3 large onions
  • 3 stalks celery
  • 1-3 chilli peppers as per personal 'heat' taste
  • 5 Tbsp salt
  • 2.5 cups white vinegar
  • 4 cups sugar
  • 1 tsp ground nutmeg
  • 1 Tbsp mustard seeds
  • 1 tsp turmeric
  • 1 Tbsp celery seeds
  • 1 tsp ground pepper
  • 0.5 tsp cornflour (cornstarch)
Instructions
  1. Into a large bowl add the chopped courgettes, red peppers, green peppers, celery and onions.

  2.  Sprinkle with the salt and mix well.
  3. Let stand overnight.

  4. Drain the vegetables then rinse thoroughly with cold water.

  5. Drain and rinse again.

  6. Place in a large pan (a preserving pan is perfect).

  7. Stir in the vinegar, sugar, nutmeg, mustard seeds, turmeric, celery seeds, black pepper, chilli and cornflour.

  8. Bring to a boil

  9. Reduce the heat and simmer for 20 minutes.

  10. Ladle into hot, sterilized jars. 

  11. Seal with jam pot covers and allow to cool. The cellophane will tighten as it cools creating an air tight seal.

This is the perfect relish to serve with burgers, sausages and BBQ chicken.

Because it is a relish and not a chutney you can eat it right away but it does improve with age.  Refrigerate after opening however I recommend keeping all of the jars that you don’t giveaway in the fridge.
